Serious Eats: Talk
I stupidly made an offhand comment that I would be interested in trying to cook a duck when my father-in-law recently mentioned duck hunting season was coming up. I got a call from him the other day saying he got one for me to cook. I politely passed on it, but I think the next one I'm going to have to actually attempt something.
I've done some searching around and it seems like it could be tricky due to the small size to get the cooking time right. Not only that, but with the "gamey-ness" of the bird, I'm not sure which recipes would be good to try.
Anyone have any good suggestions as to a good recipe or tips on preparing the duck? Most instructions on preparation I've found involve about a pound of parafin wax to remove pin feathers, etc. I'm sure its going to be an adventure.
