Christmas turkey dilemma - help me pick a rack/pan!
This year is my first time hosting Christmas for the family (Mum, Dad, Aunt, Uncle and boyfriend) and in the UK it's traditional to have a turkey for the big day.
I already decided to do Kenji's butterflied/spatchcocked roast turkey and have ordered a free range turkey (with giblets) from Marks and Spencer which should weigh 4-5.5kg or 9-12lbs.
I know you cook the turkey on a rack over a sheet pan/baking tray, I just don't have any clue what size to get! I can't picture in my head how big a chicken would be. The widest racks and sheet pans I could find were around 46cm or 18" on the long side, and a seemingly arbitrary size on the short side (this measurement was never listed).
Help me SE-ers, will this combo be big enough? Money is a little tight at the moment and I don't want to buy something the wrong size, however I can't pick up the turkey until Sunday and won't be spatchcocking it until Tuesday/Wednesday, at which point it will be too late to buy a rack.
