Baking with Almond Milk

Does anyone have any good dessert recipes that use almond milk? I wanted to use up a carton before it gets funky, and was wondering if a cake would turn out big, fluffy and moist when using a dairy substitute (pardon my ignorance!)

Any almond-milk-related baking or dessert-making advice is appreciated!
